Sockeye Salmon Burger

These delicious Sockeye Salmon Burgers are made with simple ingredients and come together quickly! They're prefect for a party or an afternoon lunch. This will be an instant family favorite!

Ingredients

SALMON BURGER
2 Wixter Alaskan Sockeye Salmon Fillets (skin removed)
1/2 cup of Celery (minced)
1/2 cup of Red Onion (minced)
1 tbsp of Fresh Dill (chopped) 
1 tbsp of Fresh Parsley (chopped)
Salt and Pepper 
1 Egg (whisked) 
1 cup of Panko (or breadcrumbs)
2-3 tbsps of Olive Oil 
Bib Lettuce (for serving) 

TARTER SAUCE 
1 small Shallot (finely chopped)
1 clove Garlic (finely grated)
1 cup of Mayonnaise
2 tbsps of Capers
2 tbsps Pickles (finely chopped)
1 tbsp Parsley (finely chopped)
1 tbsp fresh Lemon Juice
1 tsp Whole Grain Mustard
Kosher Salt and freshly Ground Pepper

Instructions

STEP 1: In a bowl mix together the tarter sauce ingredients and set aside.
STEP 2: The sauce can be made ahead and placed in the refrigerator until ready to use. 
STEP 3: With a sharp knife, carefully remove skin from salmon and chop into large chunks. 
STEP 4: In a food processor pulse the salmon until well chopped but not puréed. 
STEP 5: In a mixing bowl add salmon, celery, red onion, dill, parsley, whisked egg, salt and pepper. Gently mix until all the ingredients are combined. 
STEP 6: Divide the mixture in 4-6 portions and form into patties depending on desired size. 
STEP 7: Fill a separate plate with the panko or breadcrumbs. Place the patty on the panko and flip to cover the other side as well and set aside on a sheet pan repeating with the remaining portions.
STEP 8: In a large skillet heat the olive oil over medium high. Carefully place the patties in the pan and cook 3-4 minutes per side. 
STEP 9: Place on lettuce and top with tarter sauce.
